Inspector Comments Shelled eggs were stored above ready to eat food items in the refrigerator. Operator rearranged the eggs into the prep cooler.
Inspector Comments Raw eggs that are mixed with milk and stored in a container were found to be holding above 41 degrees F and stored in the door of the main refrigerator. Eggs were discarded. Operator suggested that since the temperature of unit may not be held low enough for such high volume customers requesting food items stored in unit; and suggested using the food prep cooler unit instead for storing potentially hazardous food items that are highly accessed during business hours.
Inspector Comments Ice machine was found to have moderate water mineral deposits and light mold on the inside and on the back of the door. Operator suggested cleaning unit after closing thoroughly by emptying unit of ice to wash, rinse and sanitize and allowing to dry before unit is turned back on for operation. Correct by Friday Jan5, 2018.
