Inspector Comments Can opener that was used on a different day was found encrusted with debris from prior use. Pathogens can be transferred to food from utensils that have been stored on surfaces which have not been properly cleaned and sanitized. Person in charge (PIC) immediately removed the can opener and washed it. PIC stated they will be putting stickers around the facility to remind employees to always wash items immediately after use.

Inspector Comments Chowder in the walk0in cooler was observed at 88F at approximately 2:05pm. The chowder was apparently placed in the cooler around 11am and was in a deep container with a lid partially over the top. The chowder would not have cooled according to the required parameters of 135-70F in two hours and 70-41F in an additional four hours. The person in charge had an ice container placed in the middle of the large container. The temperature was observed to be 75F at approximately 3pm. I suggested the use of an ice wand to quickly cool large volumes of hot soups or chowder. The person in charge agreed to use this method moving forward. They do have an ice wand at the facility.
Inspector Comments The temperature of both dish machines which use chlorine-based sanitizer, did not reach the required 120F during the wash cycle. The temperature of the water during the wash cycle must reach 120F to adequately wash the food debris off dishes. The gauge on the glassware dish machine read around 90F and the main dish machine read a maximum of 110F. The main dish machine also needed to be primed for some time before any chemicals were released during the wash cycle. Dishes had not yet been washed that day. The person in charge called their machine technician and they are stopping by today to hopefully fox the issue.
