Inspector Comments | I observed dried food residue on the inside of the chute on the chopper. I observed dried food residue on the underside of the blade guard on the meat slicer. Food residue on equipment can harbor bacteria and can contaminate foods made with the equipment with pathogenic bacteria, potentially leading to foodborne illness. The kitchen personnel agreed to clean and sanitize the surfaces, and to review procedures for cleaning this equipment. |
