Inspector Comments | There is no reminder and/or disclosure available at the point of selection to the consumer informing them that the food contains raw or undercooked ingredients. The person in charge (PIC) posted a advisory on the wall for customers to observe. |
Inspector Comments | The quat sanitizer being used in the 3 compartment sink and the buckets was reading at 0ppm and the facility lacked the correct test strips for checking the proper quat concentration. Food that comes into contact with surfaces that are not properly cleaned and sanitized are liable to contamination. The person in charge (PIC) stopped using the quat solution and was shown how to make up bleach solution for the sanitizing buckets and the 3 compartment sink. The facility already had the proper test strips for testing the concertation of bleach which should be at 50-100ppm. The PIC stated they will continue to use bleach as their sanitizing agent until they know the quat dispenser is running at the proper concentration and have the correct strips for testing |
