Inspector Comments Observed employee did not wash their hands before donning a new pair of gloves. Hands must be washed before donning a new set of gloves to avoid the risk of contaminating the gloves when handling them. Contaminated gloves can lead to cross contamination of the food. The employee was made aware of this and they immediately discarded the pair of gloves, washed their hands and then donned a new pair of gloves. Kitchen manager volunteered to train staff on handwashing policies.
Inspector Comments Observed grease and residue build up on the blade of the can opener. This can create a harborage for pathogens and cross contaminate into the food being opened. The kitchen manager immediately instructed the dishwasher to clean and sanitize the can opener. The kitchen manager stated they will clean and sanitize the can opener after it is used.

Inspector Comments Observed 2 buckets filled with chlorine/water sanitizing solution yielding over 200PPM. It was discussed that too much chlorine in sanitizing mixture can result in chlorine residue left on food contact surfaces. Also Too much chlorine in mixture can render sanitizer ineffective and not reducing or destroying potential pathogens that can lead to food borne illness. Person in charge corrected this on scene by instructing staff to remix sanitizing buckets. Final sanitizing pH was observed at 100PPM.
