Inspector Comments | Staff were observed not changing gloves between tasks. Gloves are touching both food contact and non food contact surfaces. If not changed between tasks may contaminate food that is being prepared. The kitchen manager agree and discussed/trained staff during the inspection. |
Inspector Comments | Pasta that was cooling from the night before had a temperature of 45 F at 12:45pm the following day. This did not properly cool. The manager agreed and had the pasta immediately destroyed. He discussed agreed to provide better training to evening staff and to keep logs so that he can better monitor this activity. I provided cooling logs and a AMC poster for his use. |
Inspector Comments | The service are does not have a handwashing sink for the service staff to use. The service staff have contact with food contact surface and without proper handwashing may be a vector for bacteria and pathogens to contaminate the food contact surfaces. Please provide a corrective action plan to have a sink installed in or near the service area. |
Inspector Comments | The floor in the kitchen area has several areas that are not easy to clean and sanitize. An entire section is made of wood that is absorbing dirt and grime. The kitchen manager is aware and agreed to discuss replacing the flooring with the general manager as the season ends in August. |

Inspector Comments | In the walk-in cooler a big container of chicken adobo was cooling since 11pm from the day prior. The temperature measured during the inspection was 50.6F. Person-In-Charge (PIC) discarded the chicken adobo. PIC will use shallow pans and break down the chicken adobo when cooling. |

Inspector Comments | Food was observed cold holding at temperatures above 41F. Person in Charge (PIC) identified the correct temperature for cold holding and immediately tossed the items (Two bins of scrambled eggs, one bin of mashed potatoes). |
