Inspector Comments Raw shell eggs were observed stored on the top shelf of the 2 door stainless refrigerator above ready to eat food. Because normal looking shell eggs can harbor salmonella it is important to store them below ready to eat food to prevent cross-contamination that can lead to foodborne illness. The person in charge moved the eggs to the bottom shelf and agreed to train staff on proper storage. A guidance document on proper refrigerator storage will be attached to this inspection report and can be posted on the fridge door as a reminder and training tool.
Inspector Comments Quiche was observed cold holding at 46.7F in the espresso fridge. It is important to store potentially hazardous food at 41F or below to prevent the growth of harmful bacteria and pathogens that can make someone ill. The person in charge voluntarily discarded the temperature abused quiche. A guidance document on Cooling Hot Foods will be attached to this inspection report.
