Potentially hazardous food items should be stored at a temperature of 41F or below to prevent growth of bacteria and foodborne pathogens. Person-In-Charge (PIC) discarded the sandwiches. PIC moved other sandwiches that were below 41F to a colder cold-holding unit. |

Two food worker cards were missing, with one of the employees working at the facility since April 2019. Food workers that are knowledgeable in food safety are more likely to follow food safety and sanitation best practices. Person in charge will have the two employees take the food worker test in the next week.
