Proper use of the three compartment sink was demonstrated during the inspection. All dishes must be washed, rinsed, and sanitized. The deli personnel agreed to ensure all dishes are sanitized properly.

The deli PIC agreed to make sure the cooler is at 41F or less before storing perishable foods in the cooler.
Inspector Comments Hashbrowns in the grab and go hot case had an internal temperature of 110F, and croissant sandwiches had an internal temperature of 107F. The deli PIC stated that the foods had been in the hot case for approximately 2 hours. Racks were being used to keep the food above the bottom of the hot case. The racks were removed and temperatures were checked again approximately 30 minutes later. The internal temperatures of the foods rose to 145F. The deli PIC agreed to monitor the temperatures to ensure all hot foods are held at 135F or above.

Inspector Comments Food items in the condiment fridge were observed cold holding at 61F. Food items in the deli fridge were observed cold holding at 46F. Cold food must be stored at 41F or below to prevent the growth of harmful bacteria and pathogens that can make someone ill. The person in charge (PIC) voluntarily discarded the temperature abused items. The PIC adjusted the temperature of the condiment fridge and contacted maintenance to adjust the walk in cooler and deli fridge cooler temperatures.
Inspector Comments 2 spray bottles with a clear substance inside and a gallon container with a clear substance inside were observed unlabeled beneath the 3 compartment sink. Toxic substances must be properly labeled to prevent the contents from accidentally ending up in food and making someone ill. The person in charge labeled 2 bottles as Lysol and the gallon container as vinegar and agreed to train staff to keep all chemicals labeled.

Inspector Comments Beef noodle soup was cooked and cooled yesterday and had an internal temperature of 48F. Improperly cooling foods will result in growth of harmful bacteria. PIC stated foods are normally cooled in walk-in cooler; however it is currently being serviced. Fridge used to cool soup might not be sufficient to cool foods down. PIC agreed to leave foods uncovered and use the prep fridge to cool items down until walk-in cooler is fixed.
Inspector Comments Several sandwiches in the grab n go area had internal temperatures above 41F. Foods must be cold held at 41F to prohibit the growth of bacteria. PIC voluntarily discarded sandwiches and agreed to push all the sandwiches toward the back of the fridge where it had proper cold holding temperatures.
