This facility offers a couple of dishes that contain raw salmon. If served raw, salmon will need to be frozen long enough at an appropriate temperature to kill parasites. The operator may undertake this activity himself, and keep time and temperature logs showing that it has been frozen, or he may obtain a letter from his fish supplier stating that they have frozen it. The owner will stop selling the raw salmon until he can obtain a letter from his supplier. A copy of the letter will be kept at the facility. Please email a copy of the letter of guarantee to heidi.isernhagen@alaska.gov. THIS IS A REPEAT VIOLATION. |

There is no Certified Food Protection Manager on staff. Owner stated he has received the Certified Food Protection Manager training, but could not find his certificate. A CFPM establishes policies and procedures and trains staff on ways to prevent foodborne illnesses. Please visit the FSS webpage at: https://dec.alaska.gov/eh/fss/food/resources/cfpm-training/ to obtain information on training and trainers throughout the state. Both the owner and an employee were observed touching ready-to-eat food with their bare hands. Because food handlers can be a major source of food contamination, bare hand contact with ready to eat foods is not allowed. Both employees donned gloves and will not touch ready-to-eat food in the future, gloves or utensils will be used. |

There are a couple of food items on the menu that consist of raw or undercooked food. While there is a consumber adviosry on the bottom of the menu, it is not specifically linked to the items that are offered undercooked. Linking the consumer advisory to the undercooked food item is important so that consumers can make informed decisions about eating undercooked food items. Employee immediately added a symbol connecting the raw/undercooked food items and the consumer adviosry. |

Items in the upright refrigerator in the kitchen were observed holding food at above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Temperature abused food items were discarded, and other food items were moved to another refrigerator that was able to hold food below 41F. Owner will call a repair person and will send a photo of the repaired cooler, once it has been fixed. Please send to heidi.isernhagen@alaska.gov. |

There is salmon poke on the menu, this item features raw, marinated salmon. Due to the natural occurrence of parasites in certain fish, records are required showing that the fish has been frozen for a specific time at a specific temperature. The operator may either get a letter from his fish supplier stating the supplier has performed this act, or he can freeze it himself, as long as he documents the time and temperature the fish has been frozen. Owner will either email me a supplier letter or an email stating he will perform the freezing himself. Records will be kept showing that the fish has been frozen to destroy parasites. |
