| Inspector Comments | I was told that there is no staff member currently appointed as a certified food protection manager (CFPM). Chef told me that they will notify lodge owners and make a plan to schedule for a course and exam. They stated they will contact me when this happens. |
| Inspector Comments | I saw that they are washing dishes and utensils in a dishwasher that is not fitted with a water PSI and thermometer gauge. I explained that there is no way of knowing if water temperature is reaching an adequate sanitizing temperature of 180F, needed to kill bacteria and pathogens. Chef immediately set up the three compartment sink to wash rinse and sanitize. The chef made known to me that they do not have test strip that are able to test chlorine concentration to 50-100PPM. I demonstrated to the chef the type test strips I use, they stated they can have some ordered by tonight. |
