Food items in one of the hot holding wells of the steam table, and in a hot box were observed at a temperature below 135F. Food that is held at a temperature of 135F or greater during hot holding is sufficient to prevent the growth of pathogens and is therefore an effective measure in the prevention of foodborne illness. Owner immediately turned up the temperature on the steam table. Food was moved from the hot box into the food steamer. She would monitor the food to make sure it held at 135F or above. We also discussed that time could be used as a means of temperature control for those food items that would be served in under four hours. If time is used, food may remain out of temperature control for up to fours hours, it would then need to be discarded. There would need to be a written procedure so that all staff were aware when the food was taken out of temperature control and when to discard it. Owner stated she would either purchase additional equipment that could maintain a temperature of 135F or higher, or she would send a copy of her time as a control procedure to heidi.isernhagen@alaska.gov. |

Food items in the refrigerator as well as the food prep table were observed at temperatures above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Owner immediately turned the temperature down in both units and would monitor it to make sure food items held at 41F or lower. |
