| Inspector Comments | The dish washer in this facility uses hot water to sanitize dishes and utensils. The ambient temperature of the dish washer during the rinse cycle needs to reach at least 180F so that the surface of the dishes and utensils reaches at least 160F to accomplish sanitation. The temperature of the dish washer will need to be adjusted. Until it can be fixed, the dishes will need to be sanitized in the 3-compartment sink. A volunteer immediately filled up one of the sinks with a chlorine solution of 50ppm. He would sanitize all dishes in the chlorine solution until the dish washer could be repaired.
