Observed egg and ham sandwiches with an internal temperatures of 54F. The head chef stated the sandwiches finished cooking at 5:30 AM, the morning of this inspection. Time of temperature 08:15 AM. Egg is potentially hazardous food and must be cold held at a temperature of 41F or below. The chef was able to move all PHF's stored in the cold case into the refrigerators located in the kitchen. The chef stated they will hold all foods in the back refrigerator and not use the front display case. The chef stated they will notify the owners and coordinate repairs to be made to the front display case cooler with in 7-days. |
