Inspector Comments | A bag of frozen egg rolls were observed opened on the top shelf of a freezer with ice chunks actively falling from the ceiling onto the open bag of egg rolls adulterating them. Adulterated food can lead to foodborne illness. The person in charge voluntarily discarded the bag of egg rolls and agreed to keep all food covered. |
Inspector Comments | The person in charge was unable to list any of the symptoms of an illworker. It is important that illworkers are excluded from working with food to prevent the spread of germs that can cause foodborne illness. A guidance document on illworkers will be attached to this inspection report. The PIC agreed to post this guidance document on the wall. |
Inspector Comments | The person in charge provided an expired copy of their Certified food protection manager (CFPM) certificate. It is important to have a CFPM on staff to ensure safe food is produced. The person in charge (PIC) agreed to email a copy of their current certificate to jessica.paul@alaska.gov. |
Inspector Comments | The microwave was observed encrusted in old food debris. Microwaves must be cleaned at least once per day to prevent the cross contamination of bacteria and pathogens that can lead to foodborne illness. The person in charge agreed to clean it and maintain it daily. |

Inspector Comments | Facility owner is storing unlabeled wild caught salmon and game meat inside the same freezers as foods that are purchased from an approved source. Storing wild game meats and fish with other foods could potentially cross contaminate foods due to the potential of unsafe processing methods creating harmful pathogens and that wild caught foods harbor parasites. Please store these items in separate freezer and labeled to ensure that they are not served to the public. |
Inspector Comments | Facility was storing raw meats and shelled eggs above ready to eat foods in both refrigerators. We discussed the potential for cross contamination of harmful pathogens when foods are stored this way. Owner will rearrange the units and ensure that they are stocked in this way. Inspector Comments | 3 comp sink quat solution was found un detectable and we added more solution based on the label suggestion and came up with a good recipe until they get test strips to ensure that dishes are getting sanitized properly. Food contact surfaces can harbor harmful pathogens that cause food borne illnesses and it is essential that sanitizing does take place. |
