Inspector Comments Frozen shrimp was observed thawing in a metal pan filled with water sitting on the counter. Frozen potentially hazardous foods must be thawed under refrigeration or running water to promote even thawing and prevent pathogenic bacterial growth which may cause foodborne illness. The person in charge immediately placed the shrimp under running water and agreed to follow this practice moving forward.

Inspector Comments Facility had sushi rice being stored at 93F on the counter. When food sit at room temperature bacteria and pathogens could grow and could lead to food borne illness. PIC agreed to throw rice out at 3:00pm and start using logs as discussed during the last inspection and this inspection. PIC agreed to sumbit time as a control log every Friday until further notice. Logs were provided to the facility.
Inspector Comments The handwash sink in the warewashing area is blocked by the dishmachine and the drying rack. It is important to wash hands after loading dirty dishes to prevent re-contamination to the clean dishes when putting them away. Person in Charge (PIC) agreed to have the dishwasher use the sink in the kitchen area to wash hands before handling clean dishes. PIC agreed to look at relocating the handwash sink in the dish pit area to a better accessible location.

Inspector Comments Facility receives fresh whole salmon from 10th & M. Facility is not sure if the salmon is frozen for parasites by the distributor. Person in Charge (PIC) agreed to contact the company to obtain a letter stating the fish has been frozen for parasite destruction. PIC stated if not they would purchase salmon that has been frozen for parasites or freeze the salmon in house and maintain a log.
Inspector Comments Large amount of leftover rice cooling from the day before in the prep fridge was at 44.5F. Excessive time for cooling potentially hazardous foods has been consistently identified as one of the leading contributing factors to foodborne illness. By reducing the volume of food in a container, the rate of cooling is increased and opportunity for pathogen growth is minimized. PIC Voluntarily Discarded the rice and agreed to cool the rice in shallower pans to ensure proper cooling is being met from 135F-70F in 2hrs and from 70F-41F in 4hrs.
