Inspector Comments There was no hand sink close to the kitchen area and the closest one was in the employee break room. The person in charge stated that they use the 3 compartment sink to wash their hands. It is important to have a designated hand sink in order to ensure employees take the time to wash their hands and to prevent cross contamination. The person in charge agreed to install a handsink by 12/31/2019 and send a photo to belanna.rhodehamel@alaska.gov.
Inspector Comments We asked an employee how they wash their dishes and they stated that they mix soap and sanitizer together in the three compartment sink and then rinse the dishes afterwards. It is important to set up the three compartment sink as follows: wash with soap, rinse, and a sanitize. The person in charge agreed to wash dishes using sanitizer last and agreed to purchase test strips in order to test the ppm level.
