I saw that the facility will make rice for sushi foods every four hours. I explained that even though staff is diligent about discarding the rice when four hours has past, they still need to log the food temperatures and time to ensure that they do not exceed the 4 hour mark. The manager stated they will maintain temperature logs from now on. |

I observed that the dishwasher, stove top, and oven front door was covered in a significant amount of residue. These surfaces often come into contact with other food contact surfaces. I explained to the manager this can cause cross contamination. The manager volunteered to shut the kitchen down for 1 hour from 3:00PM to 4:00 PM to clean these areas. |

I saw that there was not any detectable amount of chorine in the chemically sanitizing dishwasher. I explained that if there is not a sanitizing final step than remaining bacteria and germs may still be present and can cause illness. The manager quickly instructed staff to clean and sanitize the three compartment sink to wash dishes and equipment manually. The manager stated they can have a dishwasher tech investigate the dishwasher 08/05/22. |

I observed that both of the hand washing sinks either had dishes stacked inside the sink, or was blocked by trash cans. I explained that by not having accessible handwashing sinks, will discourage staff from washing their hands. This then may cause germs and bacteria to spread. The manager quickly cleared out both of the handwashing stations and were may accessible. |

An employee was observed preparing a salad with bare hands. It is important to wash hands and wear gloves when touching ready to eat foods in order to prevent cross-contamination. The person in charge agreed to make sure employees are washing their hands and using gloves when handling ready to eat food. The salad was discarded and another employee washed his hands and donned gloves to make a new salad. |

Ready to eat soy sauce was stored beneath raw chicken. Raw meat, poultry and seafood can contaminate cooked and ready to eat foods if stored above these ready to eat items. The operator moved the soy sauce containers to another location inside the cooler. The person in charge (PIC) agreed to re-train employees in proper storage of ready to eat food. |
