Manager removed potentially hazardous foods and turned the fridge down. Manager will not store foods in the fridge until it can be proven to hold below 41. |

No one on staff has Certified Food Protection Manager (CFPM) certificate. Having the CFPM training is a valuable tool for preventing food borne illness and training employees. Please obtain card within 30 days, handout with local instructors provided. Person-in-charge agreed to take class as soon as possible. She will email me at heidi.isernhagen@alaska.gov when she has signed up for this course. |

There was no residual chlorine detected in the dish washer after it had run through its cycle. Sanitization is accomplished after the ware washing steps of cleaning and rinsing so that food contact surfaces are sanitized before coming into contact with food and before use. Person-in-charge will have someone come look at the dishwasher to adjust the amount of chlorine that is dispensed into the machine. Chlorine test strips will be used to make sure the residual chlorine measures between 50ppm-100ppm. Until the machine is adjusted correctly, one compartment of the 3-compartment sink will be used as a sanitizing step. It will be filled with water and regular chlorine bleach so that it measures 50ppm-100ppm. The person-in-charge will inform me when the dish machine has been properly adjusted. |
