Inspector Comments I observed that the facility was using a low-splash chlorine bleach to sanitize dishes and surfaces. It is important that bleach be free of additives such as low-splash, scents, and/or cleaners so no residue is left behind. Person in charge (PIC) brought out another bottle of plain bleach and will discard or otherwise dispose of the unsatisfactory bleach.
Inspector Comments I observed that the paper towels used to dry hands did not fit the paper towel dispenser. It is important that staff be able to dry their hands after washing without contaminating the whole roll. Person in charge stated he will be replacing the paper towel dispenser. Paper towels dispenser will be supplied.

Inspector Comments The menu is hand written on a dry erase board and is missing the consumer advisory for various burgers that are cooked to order. The person in charge agreed to add the consumer advisory disclosure next to the burger selections and the reminder statement. A guidance document with instructions on how to add a consumer advisory will be attached to this inspection report.
Inspector Comments Ready to eat pickled jalapenos and pineapple were observed uncovered beneath a leaking condenser that was actively leaking water onto the food items adulterating them. Due to exposure to environmental contaminants, these food items are not suitable for human consumption. The person in charge voluntarily discarded these food items and agreed to keep all food covered in this fridge until the condenser can be repaired.
Inspector Comments Raw shell eggs were observed stored above ready to eat chicken and vegetables in the main refrigerator. Because normal looking shell eggs can harbor salmonella, it is important to store them below ready to eat food to prevent cross-contamination that may lead to foodborne illness if a shell egg were to crack and drip onto food beneath it. The person in charge reorganized the fridge and placed the shell eggs below ready to eat food.

Inspector Comments Employee was observed handling ready-to-eat onions with bare hands. Bare hand contact with ready-to-eat foods must be avoided so that cross contamination does not occur. Employee washed hands and donned on gloves before handling onions and agreed to continue to use gloves when handling ready-to-eat foods.
Inspector Comments Raw meats and raw shell eggs were observed above ready-to-eat foods. Raw meats and eggs could potentially contaminate ready-to-eat foods if not properly stored. PIC reorganized food items in fridge so that raw meats and eggs are stored below ready-to-eat foods.
Inspector Comments Employee was observed handling raw meat and not washing hands after changing tasks. Hands must be washed after handling raw meats to reduce the risk of cross contamination. Person in charge (PIC) washed hands and will either use tongs or wash hands after handling raw meats.
