Empanadas prepared yesterday were at 46F. Food that is at the danger zone temperatures (41-135F) for too long are likely to have pathogenic bacterial growth and toxin formation. The food was discarded. Please use cooling logs each day that food is cooked and cooled and submit them each week to Becky.Fletcher@alaska.gov beginning Monday, September 18. |

The operator used a spray bottle of "Chlorine Cleaner plus Bleach" as the sanitizer solution for wash cloths and dishes. This sanitizer is not to be used on food contact surfaces as it could leave a toxic residue. The operator stated they would not use this and would purchase an appropriate sanitizer before cleaning occurs. Please email a picture by 9/18/23 |
