I observed establishment not using a sanitizing solution with wiping rag. Store bought, antibacterial wipes are being used to wipe down food contact surfaces. Proper sanitation of food contact surfaces is need to prevent pathogen growth and limit cross contamination. Short term solution, establishment will fill sanitizing section of three compartment sink, use approved sanitizer and rags to wipe down food contact surfaces. Establishment will discontinue using wet wipes and obtain a sanitizing bucket and approved sanitizer, wiping rags for cleaning, and test strips.
