Inspector Comments Pizza peel is stored on the ground in between use. Even though the peel is going in a hot oven, it may not reach a temperature required to eliminate potentially harmful bacteria, viruses, etc. Additionally, chemical or physical contaminants could be introduced to the pizzas if they were to come in contact with the peel while it is on the floor. Recommended using a hook for the peel while not in use.
Inspector Comments Bleach spray bottle contained at least 500ppm bleach. In order to properly sanitize food contact surfaces without leaving a toxic residue, chlorine sanitzier (bleach) should be used from 50-100ppm. The spray bottle was immediately remade to 100ppm and the person in charge agreed to retrain employees on proper chemical sanitizer use. Additonally, two bleach buckets were observed at 200ppm and were remade to 100ppm.
