Inspector Comments | Vacuum packed individual chicken breasts were observed being held on a shelf for thawing at room temperature. They had ben out over night. Holding vacuum packed ( low oxygen packaged) foods at 41F or lower or frozen below 0F unless being processed for short periods of time prevents the growth of harmful pathogens. Manager discarded all the chicken. He will train staff on proper thawing methods and will be sure to thaw items under cold holding with the air tight seal broken. |
Inspector Comments | Large pre cooked potatoes were observed sitting on a rack in cooking area. Potatoes had been cooked the day before and left out. Temperature was above 41F. Cooling foods from 135 to 70 in 2 hours, and from 70 to 41F or below in 4 more hours for cold holding prevents the growth of pathogens. Manager discarded the potatoes and will be training staff on cooling them correctly after cooking. They will be cold held until warmed and served in the future. I have attached some cooling logs for in house use. |
Inspector Comments | Food being stored in the third prep table area were above 41F. Keeping potentially hazardous foods below 41F prevents the growth of pathogens. Manager immediately discarded all foods that were potentially hazardous. Manager tried turning down the thermostat in the unit but it did not work. Manager had staff set up an ice bin type cold holding area on top of the unit to use until the unit can be fixed. He will monitor the foods in this area with a probing thermometer to be sure it is working. Manager will not allow staff to use the failed unit until it is repaired. |
