Inspector Comments | The handwashing sink was out of soap at the time of inspection. Soap is required for proper and effective handwashing to take place. Person in charge (PIC) had the soap dispenser refilled upon request and agreed to better monitor its contents in the future. |
Inspector Comments | The ice machine had debris growing on the lip of the machine. It is important that this area remain clean due to being a food contact surface. PIC said he would have it cleaned today. It will be wiped down weekly and deep cleaned monthly. |

Inspector Comments | Shell eggs were observed stored on the top shelf in the walk in cooler above ready to eat black beans. Normal looking shell eggs can harbor salmonella so it is important to store them below ready to eat food to prevent cross-contamination that can lead to foodborne illness. The person in charge moved the shell eggs to the bottom shelf and agreed to train staff on proper refrigerator storage. A guidance document on proper refrigerator storage will be attached to this inspection report and can be posted on the fridge door as a reminder. |
Inspector Comments | Employees were observed washing sheet pans in the 1st compartment sink, rinsing them, and then placing them to air dry. Dishes must be sanitized in a solution of 50-100ppm bleach or 200 - 400ppm Quat in order to kill harmful bacteria and pathogens that can make someone ill. The person in charge set up the 3rd compartment at 50ppm bleach and agreed to train staff on proper sanitation procedures. A guidance document on cleaning and sanitizing will be attached to this inspection report that can be posted on the wall as a reminder. |

Inspector Comments | Customers are permitted to use the same soiled tableware when returning to the buffet line for 2nd and 3rd helpings of food. Re-service of food and tableware can serve as a means to transmit disease-causing agents from one person to another. The person in charge agreed to stop allowing guests to reuse the same soiled tableware. The person in charge agreed to train staff to only allow clean trays/plates to be used when serving food from the buffet service line. |

Inspector Comments | Sandwiches were observed above 41F. Foods that are cold holding must have an internal temperature of 41F or below to prohibit bacteria growth. PIC stated sandwiches were out of temperature for less than 1 hour. He turned on cold holding unit and agreed to cold hold sandwiches and any other potentially hazardous foods at 41F or below. |
Inspector Comments | Sanitizer is 3x sink was observed at 0 ppm. To safely and effectively sanitize food contact surfaces, bleach solution must be between 50-100ppm. Person in charge (PIC) remade solution to 50 ppm and agreed to obtain test strips. |
