Shredded cheese that will be cooked into mac and cheese stored in Yeti cooler had a temperature of 47F and 50F. Potentially hazardous foods must be stored at 41F or below to prevent pathogenic bacteria growth. Person in charge moved cheese to refrigerator as it would be recooked and there was no obvious violation of the product. Person in charge will add more ice to yeti coolers or will decrease the amount of potentially hazardous foods stored in cooler for the future. Person in charge will monitor cold holding temperatures in yeti coolers daily for the rest of the fair. |

An employee was observed to clean a spatula using only detergent and rinsing. Food contact surfaces must be washed, rinsed, and then sanitized to ensure they will not contaminate food items. Person in charge trained all employees how to use sanitizer and the spatula was sanitized. Person in charge will ensure all employees are trained on how to wash dishes before operations in the future. |
