| Inspector Comments | I observed an employee plating shredded lettuce and forming a burrito with his bare hands. Employees hands can contaminate foods and as a result, no bare hand contact is allowed. Burrito was discarded and new ones prepared. Owner trained his staff to use tongs or gloves when preparing foods. |
| Inspector Comments | The chlorine in the wash cloth bucket and three compartment sink was at 0 ppm. Too low of a sanitizer solution will not effectively reduce pathogenic microbes. I worked with staff on the proper ratios of water to chlorine for each. We also discussed the frequency of making a new batch of wash cloth sanitizer. They will train other staff as well. |
