Rice, which was reheated in the microwave at about 8 am, had an internal temperature of 80F at about 9:30 am. All other foods had an internal temperature above 165F during the initial reheating process. Staff initially checked the temperature and it was above 165F. Discussed that the container should not be so full as regularly stirring hot held foods will evenly distribute the heat. Staff reheated in the microwave to above 165F. Please complete the hot holding log throughout the day for hot held foods and email it each week to Becky.Fletcher@alaska.gov beginning on August 12, 2022. |

Rice, birria and beans cooked and cooled the day prior for serving today had temperatures between 48-54F. Excessive time for cooling potentially hazardous is one of the leading contributing factors to foodborne illness. Staff voluntarily discarded the foods that were outside of temperature range. Please complete the attached "Cooling Logs" for all foods cooling and email them each week to Becky.Fletcher@alaska.gov until otherwise notified. |
