Inspector Comments Raw shelled eggs were stored on the top shelf in the walk in cooler above other ready to eat foods and other food items. Raw unpasteurized shell eggs must be stored underneath any ready to eat food or other raw food that has a lower cooking temperature than shelled eggs. Storing shelled eggs underneath these items helps prevent contamination from any cracked or leaking eggs. Owner stated the eggs were on the bottom and moved to the top when cleaning yesterday. Employee moved them to the lowest shelf and owner agreed to keep shelled eggs on bottom shelf.
