Food items in the refrigerator were observed holding at temperatures above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Owner turned down the temperature of the refrigerator, she also put ice packs around food items to quickly cool down the food. She will monitor the temperature of the refrigerator to ensure that food maintains a temperature of 41F or below. Owner stated she may also buy a new refrigerator. Refrigerated food items will maintain an internal temperature of 41F or below. |

Please obtain card within 30 days, handout with local instructors provided. Owner agreed to take class as soon as possible. |
