Inspector Comments Chlorine sanitizer solution in the chemical dish machine tested at 25 ppm. Dishes that are improperly sanitized can harbor harmful bacteria that can be transferred to consumer. Owner agreed to have dish machine repaired and use the quaternary ammonium sanitizer solution in 3 compartment sink to sanitize all dishes. Once dish machine is repaired please email a copy of a test strip showing so or contact me to test it at Becky.Fletcher@alaska.gov. Also, the wash cloth bucket's chlorine levels tested at 25 ppm. Too low of a concentration will not effectively sanitize surfaces. Staff remade the solution and determined a consistent ratio of water to chlorine to reach 100 ppm. As a reminder, chlorine test strips are to be acquired and used daily to test the chemical dish machine once repaired.
