The temperature of foods being held in the large refrigerator was observed to be over the maximum allowed cold holding temperature of 41F. Potentially hazardous foods must be held at 41F or below while refrigerated to prevent the growth of pathogenic bacteria which can cause foodborne illness. This refrigerator stores mostly produce and extra milk, eggs. The person in charge agreed to move the majority of the food to an extra refrigerator which is holding proper temperature. Only milks which are in use and produce will remain in the refrigerator until its temperature can be adjusted. The person in charge contacted a local HVAC technician to service the refrigerator. |

A tub of shredded cheese was at 45F on the bottom of the main fridge. Bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Person in Charge (PIC) agreed to monitor the temperature of the fridge, turn the fridge colder to keep up with the constant opening and closing and/or move the cheese to a colder location if the fridge can not hold the temperature at 41F or under. |
