Inspector Comments | In the walk in cooler, there was gravy and bacon that was cooling for more than six hours and were above 41F. They were held in deep containers and covered. As a reminder, cooked food is to be cooled from 135F to below 70F within two hours and from 70F to below 41F within four additional hours to reduce pathogenic microbe growth and toxin formation. The manager threw away the food and will keep cooling logs for all foods cooked in advance and cooled. Please email the log each week to Becky.Fletcher@alaska.gov until otherwise notified. |
Inspector Comments | The manager took the course in March but has not yet been able to take the Certified Food Protection Manager's exam. A CFPM establishes policies and procedures, and trains staff on methods to prevent foodborne illnesses. Please visit the FSS webpage at: http://www.dec.alaska.gov/eh/fss/CFPM_training.html to obtain information on training and trainers throughout the state. Inspector Comments | The deli slicer blade either had caked on dark brown debris or rust on the blade which contacts deli meats. Rust or debris are both contaminants. The manager stated she would try to clean the blade that night and if unable to do so, would order a new blade. She also stated deli meats would not be cut until it is no longer contaminated.
