Inspector Comments The facility did not have test strips to test the bleach concentration of their sani-buckets and dishwasher. It is important that test strips are used to test bleach concentrations in order to ensure that bacteria is properly eliminated and that sanitizers are not toxic to humans. The person in charge agreed to purchase test strips and send pictures of the test strips reading between 50ppm and 100ppm in the sani-buckets and dishwasher to allison.brooking@alaska.gov by 7/29/22.

Inspector Comments Raw frozen beef and pork was found stored above ready to eat foods in the freezer. Operator moved the frozen raw meats to the bottom of the freezer and will continue to store meats above ready to eat food. Raw meat, poultry and seafood can contaminate cooked and ready to eat foods if stored above these ready to eat items
Inspector Comments Pasta salad and watermelon were found to be holding above 48 degrees F in the salad bar and in the salad bar fridge. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Operator turned up the refrigerator units and will continue to monitor the units ensuring they are holding foods at or below 41 degrees F.
Inspector Comments No certified food protection manager certification. Facility operator will notify EHO when training is complete and email or fax a copy of the certification within 45 days. EHO will follow up on May 31, 2018. Please visit the FSS webpage at: http://www.dec.alaska.gov/eh/fss/CFPM_training.html to obtain information on training and trainers throughout the state.
Inspector Comments Not all food workers have a valid Food Worker Card as required. Please visit http://alaska.state.gegov.com/foodworker/ to obtain training and to take the Food Worker Card test.
Inspector Comments Dish washing machine was not sanitizing dishes. The chlorine step was not working. Dishes will be sanitized in the three compartment sink until the unit is fixed. Operator will notify EHO when unit is serviced and in working order.
