The mechanical dishwasher is dispensing 0 ppm of chlorine solution. Too little chlorine will not reduce pathogenic microbes. The operator stated they will reach out to EcoLab to fix the machine. Until it is fixed, staff will use the three compartment sink with 50-100 ppm chlorine solution to sanitize. Please email proof of fixing machine to Becky.Fletcher@alaska.gov by December 16, 2024. We also discussed training staff to test the machine each day to verify it is working correctly. |

The handwash sink is also being used to rinse dishes in. In addition, the handwash sink does not have paper towels in a dispenser. Both of these increase the risk of recontaminating just cleaned hands. Staff designated one sink as handwashing and trained others during the inspection. They will get a paper towel dispenser before opening tomorrow. |

Seafood is purchased from Young's Ocean and they freeze it to adequately to kill parasites. The operator does not have a Letter of Guarantee or similar documentation on file to support this though. Seafood can transmit parasites to humans if it is served raw and not frozen sufficiently. Staff contacted Young's Ocean during the inspection and will get the Letter of Guarantee by tomorrow. |

There is no Certified Food Protection Manager on staff. A CFPM establishes policies and procedures and trains staff on ways to prevent foodborne illnesses. The sushi menu items, under "sashimi" which is raw seafood, did not contain the symbol to link it to the statement "This food is served raw" along with the increased risk of foodborne illnesses. Some customers may not be aware that sashimi is raw seafood and is to include the symbol to inform them of this as it increases foodborne illness risks. Chicken, dumplings and shrimp were taken out of refrigeration at 11 am and held by the stove in the kitchen. Ice packs were used underneath to try to keep them cold. Food had internal temperatures between 46-60F at 4:30 pm. Food cannot exceed four hours outside of temperature control and if refrigerated, must be below 41F to reduce pathogenic microbe growth and toxin formation. Staff voluntarily discarded the chicken, dumplings and shrimp. The owner discussed purchasing a cold hold unit similar to their sushi bar for foods. Until then, food will be limited to no more than four hours outside of temperature control. Chicken and noodles that were finished cooking at 11 am had temperatures above 41F at 5:30 pm. Excessive time for cooling potentially hazardous is one of the leading contributing factors to foodborne illness. Staff voluntarily discarded the chicken and noodles. Please complete a cooling log for each item that is cooked and cooled and email a copy each week to Becky.Fletcher@alaska.gov starting July 8, 2022. |

The kitchen has two separate handwashing sinks. The hand wash sink located by the entrance was not supplied with paper towels or contained a dispenser. The second handwashing station did not have soap, paper towels, or a dispensing unit. A supplied handwashing sink encourages regular and frequent use. Managers agreed to get paper towel dispensers, soap and keep them supplied. The manager will purchase paper towel dispensers and an additional soap dispenser either tonight or tomorrow before opening. Also, she will work with staff to keep it stocked. |
