| Inspector Comments | PHF was not up to 165 degrees F when temperature was taken. It is important to reheat to 165 degrees F to prevent bacterial growth. PIC pulled the meat and reheated it in the microwave, stirring to ensure equilibrium, and returned to hot hold warmer. The temperature will be taken to ensure PHF doesn't fall below 135 degrees F. |

It is important to keep food contact surfaces clean and sanitized to avoid contamination.
