We tested the temperature during four cycles of the dishwasher and the highest temperature recorded was 150F. While the establishment is utilizing their three compartment sink to wash the majority of their dishes, they are using the dishwasher when busy and to wash glassware. Food contact surfaces need to be properly sanitized to prevent the spread of foodborne illness. When heat is the method used to sanitize food contact surfaces, a temperature of 160F is the minimum surface temperature. This was brought to the attention of the manager and they will be solely utilizing the three compartment sink to wash all dishes until they can have the dishwasher serviced. The manager stated they will contact the company who services the dishwasher and have it fixed. |
