Hot held meats in hot cabinet #1 were observed to be below 135F. Food that is held at a temperature of 135F or greater during hot holding is sufficient to prevent the growth of pathogens and is therefore an effective measure in the prevention of foodborne illness. Owner immediately adjusted the temperature on the unit. Owner will monitor the internal temperature of hot held foods to ensure that they maintain a temperature of 135F or greater. |

The sanitizing solution in the spray bottle was observed at over 200pm. The owner discarded the sanitizer and remade it to 100ppm, which I verified with a chlorine test strip. There were no chlorine test strips onsite. Owner will purchase test strips so that she can verify sanitizer concentration in the future. |
