The meat packer/stuffer machine had visible food food debris right along the outside of the extruder where meat enters the casing. If food debris is not fully removed and cleaned off equipment, it can be a harborage point for pathogenic bacteria and potentially cause foodborne illness. The end piece was taken off and immediately cleaned in the three-compartment sink. The person in charge agreed this area on the machine needs to be monitored more closely moving forward. |

Inspector Comments |
Staff are not following monitoring procedures outlined in HACCP plans. Without proper monitoring and verification procedures, it is difficult to ensure product is being made safely every time. There are four HACCP plans for various products processed in the facility but no records are being kept to verify the plans are being followed correctly. The person in charge agreed to work with available resources on developing monitoring checklists and potentially condensing hazard analysis and HACCP plans to be more easily understood by employees. Once these checklists are developed, they will be sent in to me for verification. |
