Food was observed to be above 41F in cold holding including a hotel plan of black beans (48.3F). The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. A food employee voluntarily discarded the black beans. The person in charge (PIC) will monitor the temperature of the cooler to ensure that it is maintaining temperatures of 41F or below for cold holding foods and provide further training on proper cooling to food employees. |

A spray bottle used for chlorine sanitizer was not labeled to properly identify the contents. The accidental contamination of food or food-contact surfaces can cause serious illness and the identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents. A food employee immediately labeled the bottle to identify the contents and the PIC will ensure that all containers are properly labeled to identify the contents to prevent possible misuse and contamination |
