| Inspector Comments | Employee was observed washing dishes in the 3 compartment sink but skipping the sanitizing portion of the wash. Sanitization is accomplished after the warewashing steps of cleaning and rinsing so that food contact surfaces are sanitized before coming into contact with food and before use. Person in charge (PIC) was immediately informed that all dishes used for food use must be sanitized by immersion of the utensil and air drying after. The employee immediately started adding this step to their dish washing process. PIC and employee were shown how to mix the bleach water at proper concentration and informed they must have the proper test strips to test the bleach concentration to ensure it is between 50-100ppm. PIC will send a photo of the purchased test strips to krista.weydahl@alaska.gov |
