Inspector Comments Prosciutto, sauasage, pepperoni, chicken, cheeses, cooked squash and garlic were observed on the counter at temperatures between 58.2F-67.1F. Person in charge stated that these food items that are used for pizza toppings are stored on the counter during service and occasionally switched out with colder food items in the refrigerator. Potentially hazardous foods must be cold held at 41F or below or hot held at 135F or above. Potentially hazardous foods that are held at temperatures within the danger zone 41F-135F are susceptible to rapid bacterial growth. Person in charge voluntarily discarded all potentially hazardous pizza toppings and agreed to keep all pizza toppings in an ice bath during service.
Inspector Comments Bacon that was previously cooked and cooled was observed in refrigerator in plastic containers with lids at temperatures between 79.8F-81.9F. Person in charge stated that the bacon was cooked this morning and began cooling at 11:00am. Potentially hazardous foods must be cooled from 135F to 70F within 2 hrs and then from 70F to 41F within an additional 4 hrs. Potentially hazardous foods that are improperly cooled are susceptible to rapid toxin formation. person in charge voluntarily discarded the containers of bacon and agreed to cool potentially hazardous food items in the commercial refrigerator in shallow metal pans. Person in charge agreed to monitor temperatures with thermometer during the cooling process to ensure proper cooling parameters are being met. A cooling has been included with this report. Inspector Comments The owner's dog was observed in the kitchen area of the facility. Animals are not allowed in the kitchen due to potential cross-contamination of food and food contact surfaces. The owner immediately removed the dog from the facility and agreed to not bring the dog into the kitchen.
