Inspector Comments Eggs in the walk-in cooler were observed stored above ready-to-eat (RTE) foods. The eggs can contain salmonella and could contaminate RTE foods if the eggs crack or break and drip onto the RTE foods. Employee immediately moved the eggs to store below all ready-to-eat food and would make sure they continued to be stored that way in the future.
Inspector Comments - No one on staff has CFPM certificate. Having the CFPM training is a valuable tool for preventing food borne illness and training employees. Please obtain card within 30 days, handout with local instructors provided. Kitchen Manager agreed to take class as soon as possible.
Inspector Comments The ware washing machine uses heat to sanitize the dishes and utensils. The temperature of the machine was observed to have not reached temperatures adequate enough to accomplish sanitization, as verified by a plate simulating thermometer. Until the ware washing machine was fixed, employee would fill a compartment of the 3-compartment sink with a sanitizer solution and make sure all dishes and utensils were sanitized after washing and rinsing.
