Inspector Comments | Observed potentially hazardous food in the Traulsen brand fridge that were above 41 degrees. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Staff moved food to a different refrigerator. They will call repair company to fix the unit. This is a repeat violation. When fixed staff will monitor temperature and log it for follow up. Staff will send logs to heidi.isernhagen@alaska.gov |

Inspector Comments | Food in one of the refrigerators was observed holding at temperatures above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Food in top of the refrigerator was observed at temperatures of 34F, while food a few shelves down was observed at 48F-50F. Staff had put cardboard down on the first shelf, and items on the second shelf were in cardboard boxes. Both of these things are blocking the cold air (which is coming from the top of the refrigerator) from circulating to the food items lower down in the unit. Staff immediately discarded temperature abused items, moved food items to another refrigerator until after the meal service when they could rearrange the shelves and remove the cardboard so that it did not block the airflow. I also suggested putting the thermometer down at the bottom of the refrigerator, as that would be the warmest point, to make sure temperatures at the bottom were also holding at 41F or below. |
