Unpasteurized eggs are served sunny side by customer request. There is no consumer advisory warning of the risks of consuming undercooked eggs. We also discussed that the best practice is to serve pasteurized eggs due to the highly susceptible population. Staff will create a placard stating "Eggs are cooked to order" and warn of the risks of foodborne illness prior to serving eggs on February 10, 2023. |

There is no Certified Food Protection Manager on staff. A CFPM establishes policies and procedures and trains staff o ways to prevent foodborne illnesses. A bleach spray bottle used on food contact surfaces tested above 200 ppm instead of 100 ppm. The quaternary ammonium for the dishwasher tested at 0 ppm. Too little sanitizer does not effectively reduce pathogenic microbes. Too much sanitizer can leave toxic residues. Staff established a system for the amount of chlorine to water in the spray bottle. Staff will use the three compartment sink to sanitize dishes until the dishwasher is fixed. Please submit a written work order documenting that the dishwasher will be fixed to Becky.Fletcher@alaska.gov by February 13, 2023. |

There was an unknown and unlabeled clear substance in a spray bottle by the handwashing sink. Correct labeling supports the proper use of poisonous and toxic chemicals. The chemicals were discarded and staff were trained to label secondary containers. |

The dishwasher is a home style unit. The D/W lacks temperature gauges and a pressure gauge. If a dishwasher is installed it must be commercial grade. The manager agreed to discontinue use of the current dishwasher and remove from the kitchen to ensure is is not used. |

The hand wash sink was blocked from use by a bucket and milk crate. Hand sinks must be accessible at all times to promote proper hand washing to prevent contamination from bare hands. The manager moved the items blocking the sink and is going to instruct the rest of the staff to keep the area clear. |

Bleach used for sanitizing utensils, table tops, food contact surfaces is over 200ppm. For the 3x sink use 50ppm and for wiping cloths use 100ppm bleach/water mix. Elevated levels of bleach above 200ppm is considered toxic levels. For all utensil and food contact surfaces use 3 steps. Wash with hot soapy water, rinse with clear water, sanitize with the appropriate concentration of bleach/water. The manager will use measuring devices and test strip and train the other kitchen staff of proper mixtures. |
