The ice machine was observed without a cover on the ice reservoir. It is important that all stored foods are protected with a covering in order to prevent cross contamination. The person in charge agreed to cover the opening with foil until an official cover can be provided by the machine's manufacturers. Mashed potatoes that were cooked on 11/16/22 were observed at 50F in the walk-in cooler. It is important that foods cool from 135F to 70F in two hours and then to 41F in an additional four hours to prevent the growth of harmful bacteria. The person in charge voluntarily discarded the potatoes. Other items were observed properly cooled and the person in charge agreed to cool mashed potatoes in a smaller container in order to ensure that they cool within the allotted time. |

The dishwasher was observed producing a 0ppm bleach sanitizer solution. It is important that bleach sanitizers are kept at a concentration of 50-100ppm in order to properly destroy harmful bacteria. The person in charge agreed to get the dishwasher fixed and to sanitize dishes in the three compartment sink until the dishwasher is fully functional. Please send a repair receipt or a test strip reading a dishwasher bleach concentration of 50-100ppm to allison.brooking@alaska.gov. |

Upon arrival the person in charge directed me to wash my hands in the 3 compartment sink which is supplied with handsoap. It is important to only wash hands in a designated handwashing sink that is used exclusively for handwashing to prevent cross-contamination that can lead to foodborne illness. The person in charge stated they normally use the handwashing sink and that the chemical supplier installed a handsoap dispenser at the 3 compartment sink so they assumed it was allowed. The person in charge agreed to retrain staff to only use the handwashing sink for handwashing. A guidance document is attached as well regarding standard operating procedures for handwashing. |
