Items in the small refrigerator under the espresso machine were observed above 41F. The rate of bacterial growth and possible toxin production can be greatly reduced when foods are held at temperatures of less than 41F. Employees immediately turned down the temperature in the refrigerator. They took an ambient thermometer from another refrigerator and placed it in the unit. They would monitor the refrigerator to make sure it always held contents at or below 41F. |
